As for 3rd person in BF series, I flew planes in 42 in 3rd person a lot, specifically when bombing. Jeeps always in 3rd person as their first person was offset and poorly done. In BF2 hummers and the buggies I am always 3rd person as again the cockpits were pretty poor IMO (at least in the hummer) and you do get a wider FOV. Jets and Helos I use the Nose Cam instead of Cockpit.
If a game does the cockpit well I am all for it. In BF games many (but not all) of the vehicles have obtrustive cockpits. Obviously the game genre has general issues (e.g. you are not flying at thousands of feet, and in general you don't want to be in a dive bombing position just to target, etc) but I don't think Dice has ever gone out of their way to make cockpits in ALL vehicles workable/enjoyable.
This is where PGR3 shines IMO. When I have played I never felt like the cockpit made it impossible to race, and I felt much "closer" to the atmosphere -- almost like in a real car. After a while you kind of feel that way too... in 3rd person, yeah you see better, but it is more of a "game" whereas in the cockpit it is more of an "experience". And not a bad one IMO.

I'm a tank, and I play almost exclusively in my cockpit view, only go to third person if I need to see directly behind myself quickly.
As for cycling... I use a hat switch on my joystick. I have left as Nose-cam, right as cockpit, up as 3rd person trail, and down as 3rd person look behind.
Tanks are the 1 where I use the cockpit and they are well done, although like you I will cycle to see if someone is laying stuff behind me!

The outside view of the car the game just feels so damn slow and I feel like I'm not really in control of the car, but inside the car its like I'm really the person driving it.

Yeah this picture looks great and all, but it's not how it looks on your average HDTV.
I'm not quite sure what it is, I think it's the way the lighting is captured that makes it look more realistic, but the game never looks as realistic as that screen on your HDTV.
And yes, the cockpit view works like a charm and I do feel much more comfortable using it rather than a 3rd person view...

Still, the jaggies, while aparent on my monitor, don't prevent it from being one of the best looking 360 games to date.
I've tried many contrast and brightness levels, and none of those make the game look like that.
Also, that's exactly my point, when a picture is taken of a game running on an HDTV, it seems to add some sort of lighting effect that makes it look more realistic.
And I've seen this with several games, not just PGR3 and not just on my HDTV either...
