I love Xenoblade Chronicles 1, by far the best one in the series. The story, characters, exploration, combat, enemies, surprises, soundtrack, etc. Everything just clicks and works wonderfully. The very definition of an epic RPG.

There's also Western RPGs like:
The Witcher 1-3, Mass Effect 1-3 + Andromeda, Assassin's Creed: Odyssey, The Outer Worls, The Elder Scrolls 1-5, Fallout 1-4, Baldur's Gate 1-2, Knights of the Old Republic 1-2, Vampire: The Masquerade - Bloodlines 1, Borderlands 1-3, etc.
RPG is most likely the genre with the most games. Most take hours, so they're great for losing yourself in their worlds.
