So at the end of the day a good rpg is all about story and immersion. ME1 and 2 nail it.
Fable 3 is also great fun, playing it at the same time as Witcher 2, both on PC, and enjoying fable way more, right now i find witcher is clearly rushed/underbudget

-Loot has returned, obviously with some kind of inventory system that allows us to pick things up, INCLUDING enemy weapons on the field. However we won't be able to pick up everything the enemy drops. For example, the shock sticks that we see Cerberus troops using? Shepard won't be able to pick up those.
-Mining and Planet Scanning have also returned but has been scaled back considerably. (No info on just how much it's been scaled back but the phrase used was "won't be completely abandoned")
-ME1 Weapon Mods have returned, but (and this is a big BUT) not all guns will support weapon mods. My guess is the CE N7 or other DLC guns won't be modable.
-Squad Armor customization is a little harder to nail down. We've got the alternative appearance packs that would seem to suggest that customization for squad mates isn't going to happen, but then Casey tweeted again and said that squad armor customization is definitely in. My guess is that this is something that is continuously being worked out and we won't know for sure how it will be applied until very close to the game's release.
-Shepard's armor in the demos we've seen is just a place holder armor. Apparently Shepard will have some kind of N7/Spectre hybrid armor.
-The Cerberus Network that we used for DLC items, messages, news and info is gone for obvious reasons. It will be replaced with either an Alliance or Spectre Network.
-Provided that they've survived, it looks like ALL ME1/ME2 Squad Mates will be returning for in ME3. However, we will only be able recruit 9-10 of them, and some of them will only be mission-temporary.
-Depending on your decisions in ME2, Shepard will have command over the Geth and the Geth fleet. There is however a major "fly in the lotion" as the Quarians are going to be at war with them. You'll also have Admiral Xen (the one who sends you that charming email after Tali's trial) to contend with.
-The new "blades" (some have called them lightsabers lol!) are across all classes. Adepts will have a blade made of "psionic energy" , Soldiers get a tech blade while the other classes will have omni blades or melee attacks more suited to their specialization.
-You can toggle helmets and they will remove themselves during conversations. However, toggling and conversation removal will not work not for armor "suits" You know the kind I mean, Inferno, Terminus etc.
-In-Game loading sequences have returned to the Normandy for ME3. It should have never been removed in the first place. If I purchased armor and I wanted to get on board the Normandy I had to watch the Normandy take off into space, then watch another loading screen of the Normandy, then watch another loading screen for the elevator ride to my quarters. Then load screen ride back to the CIC, hit the galaxy map to head back to my previous planet location, and load screen AGAIN to get back to where I started. Absolute tedium. You really have to wonder who's bright idea it was to remove in-game loading. No word on elevator rides OFF the Normandy.
-The game save import feature will be improved to allow you to take a look at what you've done in a game to avoid loading that save before you know what's in it like in ME2. Pretty good feature if you have lots of saves and can't keep them all in your head. If you don't have a save, the comic book will make all of your choices for you.
-The Normandy Mech Dog is exclusive to the N7 Edition of ME3 and won't be available later as separate DLC. I hope it does something useful, like shit thermal clips.
-Cerberus troops are FULLY indoctrinated, they are completely under Reaper control. We can only imagine what happened to TIM.

I seriously doubt ME4 would happen, not at the Bioware inside studio anyway. Id rather iPhone spinoffs by some small devs than Bioware ruining their reputation with ME4. Look at the nonsense DA2 was. Even DAO was subpar (i got the collectors edition to boot)...
ME2 tho, it was cake, good cake, where 50 hours passed by without me realizing it.
EDIT: Classes will remain the same as always, warrior, druid, sorc, and jedi.
EDIT 2: Just puked in my mouth thinking a ME MMO will likely happen.

You already had an idea of what to expect. And knowing that you had to speak with whoever to get a tip as to the whereabouts of that person, there was a tiny bit of sameness there, as awesome as it was. For example, I'd like to approach most missions not knowing what to expect at all, kinda like when you first visited in ME2 one of the colonies targeted by the Collectors. Or like when you Went to investigate that downed Reaper or whatever that the Illusive man claimed Turians sent a distress call from.
Those missions in particular had a different feel to them that I really enjoyed, just like the final mission. All in all, the entire game was awesome.
